Hello Monday



Good Morning! I had every intention of linking up with Lindsay from Lindsay's Sweet World, but ended up coming down with bronchitis. On top of that my husband and I got a new puppy - so to say that I am tired, is a HUGE understatement. Hopefully I'll be back by the end of this week, but for now I need to rest. Hope you all have a great first start of the week!

Friday Favorites

FRIDAY FAVORITES

Today I'm linking up with Andrea, Erika, and Narci to share some of my favorites
This week I have a list of  FIVE favorites.

ONE
First up is this Whole30 Cookbook. I started the #Whole30 on Monday, January 7th, so I'm a little over half way done. This cookbook is amazing and has been a FAVORITE around our house this last week. There are so many delicious recipes and I've enjoyed changing up my meals. 
Also, bonus is that it's for sale at Target! Only $17.99! Do yourself a favor and if you're wanting to try the #Whole30, go get yourself this cookbook.

TWO
It was not a FAVORITE having to say goodbye to my brother this week as we send him off to North Carolina to start a new chapter in his life with a new job, however it was a FAVORITE having him home for a little over a month. 
I hope to re-cap our trip soon to Alabama & Tennessee! We had the best of time travelling with family in celebration of his graduation from University of Alabama! #RollTide

THREE
My husband and I are very excited to pick-up this sweet little chunk this weekend! We finally decided on a name for him - Buford Blue - and it has been a FAVORITE receiving picture updates from the breeder. We found out that at his 8 week check-up, he weighed in at 18 lbs. When we picked-up his big brother, Lieutenant Dan (can you tell we are BIG Forrest Gump fans in this house?!) in December 2017, he weighed in at 11 lbs.  It's been fun comparing pictures.

FOUR
Stop what you're doing and go get this stuff right now! Has anybody ever tried this stuff? Let me be the first to tell you - this stuff is GOLD! I use it in my hair after I shower, 1-2 times a week and its a FAVORITE for sure. It leave my hair feeling so soft and silky and bonus - it smells divine! I picked up mine at Ulta, and it was worth every penny.

FIVE
My last FAVORITE of the day is the infamous Medicine Ball Tea at Starbucks

Has anybody tried this? Friends, this drink is amazing and definitely will help kick your cold if you feel like you are starting to get sick. The recipe you may ask?

1 Venti cup with half hot water and half steamed lemonade
1 bag of Teavana Jade Citrus Mint Tea
1 bag of Teavana Peach Tranquility Tea
Packet of honey
Pump of peppermint (optional)

I have big plans to try to re-create this recipe at home this weekend.

Recipe - Pumpkin Custard Bake

It's Day 8 of being on the Whole30 and I wanted to share this yummy recipe I made yesterday that is Whole30 compliant. I found this recipe on Pinterest from LouisianaBride

Ingredients: 

  • 1 (13.5 ounce) can full fat coconut milk
  • 1/2 cup chopped pecans, or other nuts you like
  • 2 very ripe bananas
  • 3 TBSP almond butter, or almond meal
  • 4 eggs
  • Cinnamon or Pumpkin Pie Spice to taste
  • 1 (15 ounce) can pumpkin puree

Directions:

  1. Preheat oven to 350 degrees.
  2. In a 13x9 baking dish - place all ingredients except the nuts. Using an immersion blender, blend the mixture until combined well. If you don't have an immersion blender you can put the ingredients in a large bowl and use a hand mixer or stand mixer.
  3. Once combined, sprinkle the top with nuts and place in the oven for 30 minutes. Serve warm or chilled
*It will be a much nicer custard consistency when chilled
*If you aren't following Whole30, I would suggest adding vanilla extract

This recipe was delicious and helped aid my sweet tooth. I had it for breakfast and as an after dinner "dessert". I would definitely suggest really mashing up the bananas, so that there aren't chunks throughout the custard, as well as sticking to the ingredient list and using ripe bananas. The riper, the sweeter the custard will be.
